CIEH Level 2 Award in Healthier Food
and Special Diets

This is a user-friendly course which is of special interest to everyone who would like to understand more about Healthier Eating and Special Diets. It should be widely attended by anyone preparing, or planning meals for groups of people; especially in a School / Nursery / Hospital / Residential / Custodial Care. I would lke to see it rolled out to Practice Nurses around the Country. It is a 6 hour accredited course, with a formal test paper at the end.

The course starts with an introduction to Nutrition, covering essential nutrients and energy as well as learning about the importance of a balanced diet with Proteins, Carbohydrates, Fats and other constituents of food. Also covered is the Balance of Good Health - the requirements of a balanced diet; the importance of Five-a-day along with tips for eating well. The course looks at the link between diet and disease along with excess consumption and obesity; fat intake and heart disease.

The Special Diets element examines the nutritional requirements of special groups - i.e. Infants to Adults; Pregnant Women; Older People; Slimmers; Vegetarians; Ethnic Minority Groups; People with Diabetes and Food Tolerances and Allergies.

Catering for different groups is covered - i.e. Hospitals; Residential Homes and Community Meals Service; Nurseries; Primary and Secondary Schools along with Prisons and Custodial Settings.

Finally, the course covers Food Processing and effects of cooking and preservation along with an extremely informative section on Food Labelling. The law on food packaging is outlined, and discussed.
